1 tbsp of yogurt
3 tbsp plain soy milk with no added sugar
1/2 cup oatmeal
1 scoop of Whey-X XPN protein (Cream cookies)
1 tsp of cinnamon
1/2 tsp baking powder
Coconut oil (for cooking)
1/2 pear, cut into small cubes
1. In a blender, add the egg, yogurt, oatmeal, soy milk, protein powder, cinnamon and baking powder. Blend gently for 15 to 30 seconds or until smooth. Add a little more milk if the mixture is too thick or more oats if it is too runny.
2. Add the chocolate chips and pear cubes. Mix well.
3. Heat a non-stick skillet over medium to low heat. When the pan is hot, add a little coconut oil. For each pancake, pour about 1/4 cup of batter in the center of the pan. With the back of a spoon, lightly spread the dough. Cook until bubbles start to form and edges start to set. Flip and cook for about 2 minutes (1 to 2 minutes per side).
4. Keep the pancakes warm (in an oven preheated to 95 ° C / 200 ° F) long enough to make them all. Serve with your favorite toppings. Mine: yogurt, pear pieces and homemade granola!
